Potassium sorbate, also known as potassium 2,4-hexadienate, is the potassium salt of sorbic acid, with the molecular formula C6H7O2K. It is a colorless or white flaky crystalline or crystalline powder. [1] Odorless or slightly odorous, exposed to air for a long time, prone to moisture absorption, oxidation and decomposition, and discoloration. Easy to dissolve in water (67.6g/100mL at 20 ℃), soluble in propylene glycol (5.8g/100mL) and ethanol (0.3g/10mL). Potassium sorbate and sorbic acid are commonly used organic preservatives, widely used for the preservation of food, cosmetics, and feed. Easy to be absorbed and metabolized by the human body, with no residue in the body and non-toxic.
